Winemaker Greg Brewer approaches his craft, not by what he adds to the final product but by what he subtracts, allowing the land to speak for itself through the wine. He fermented this Chardonnay at very low temperature in stainless steel tanks to ensure a pleasing balance across acidity, texture and body. Pure, precise aromas of lemon and citrus blossom greet white peach and a touch of salinity on the palate, making this a perfect bottle to pair with spicy or coastal cuisine.

Winemaking
Fermentation at very low temperature in small stainless-steel tanks, coupled with inhibited malo-lactic and short hose transit ensure precision and focus. All of the wines are produced with the intention of aging and cellaring for at least 10 years and can easily be enjoyed after 15 years.
